Cherry Chicken Croissant recipe
When you can't make it to the French bistro, bring the bistro to your home. This recipe takes a regular chicken salad base and transforms it into an elegant filling of fruits, vegetables, and fresh herbs - stuffed inside a flaky croissant, it's a café classic you can recreate time and again.
Ingredients:
1 cup mayonnaise
2 tablespoons fresh lemon juice
1 teaspoon dried tarragon
1 teaspoon sugar
½ teaspoon dried basil
¼ teaspoon salt
¼ teaspoon black pepper
1 ½ cup chopped rotisserie chicken
½ cup chopped pitted cherries
¼ cup chopped walnuts
1 celery stalk, finely chopped
2 scallions, finely chopped
Lettuce leaves, for serving
4 croissants, halved lengthwise
Directions:
1. In a small bowl, combine mayonnaise, lemon juice, tarragon, sugar, basil, salt, and pepper.
2. In a separate large bowl, combine chicken, cherries, walnuts, celery, and scallions. Add mayonnaise mixture to chicken and toss well to coat.
3. Serve a heaping scoop of chicken mixture on bottom of croissant; top with lettuce and other croissant half and serve.
